Pumpkin Cheesecake topped with sliced apples.....yum!



I haven't baked in quite some time, so I decided to make a fall dessert for my Sunday night dinner, and what better dessert than cheese cake?  I thought it would taste delicious if I made a pumpkin cheese cake and then top it with apples.  Here's how I made it....

To make the crust, mix the following: 

1 3/4 cups cinnamon graham cracker crumbs
3 tbs light brown sugar
1/2 tsp ground cinnamon
1 stick melted salted butter
1/4 cup finely chopped pecans
Press this into the bottom of a 9" spring pan and bake at 350 degrees for about 10 minutes.  Remove from the oven and let cool.

Now for the filling...mix the following:
3 packages of cream cheese, room temp
1 15 oz can of pureed pumpkin
3 eggs plus one egg yoke
1/4 cup sour cream
1 1/2 cups sugar
1/2 tsp ground cinnamon
1/8 tsp ground nutmeg
1/8 tsp ground cloves
2 tbs all-purpose flour
1 tsp vanilla extract





Peel, core, and slice 3 apples.  Toss the slices with 1/2 tsp of cinnamon and 1/3 cup sugar and spoon over the filling.  Chop up about 1/4 cup of pecans and sprinkle over the apples.



Preheat your oven to 350 degrees F.

Cook for 1 hour.  Remove from the oven and let sit for 15 minutes.  Cover with plastic wrap and refrigerate for approximately 4 hours.



 When serving, add some whipped cream or a scoop of vanilla ice cream.  Yummy.
