Quick and easy Beef and Broccoli


Tonight I have gained some new viewers...so here is a shout out to my daughter, Shannon's Period F Geometry class!  Welcome, girls....  I'm so glad I can share my creations with you!




Tonight is a very easy, delicious dinner that you are going to love.  There is just a little bit of prep work you have to do.  I began by putting the sauce together.  So easy... 1 can of condensed tomato soup, 3 tbs of soy sauce, and 1 tbs vinegar.  Set this aside and grab the broccoli.

Start by trimming and cutting fresh broccoli.  Use as much as you would like to make! I think I used half of a Costco bag....  Then I cut up 1 large red pepper.  I sauteed the broccoli in a hot skillet with a little olive oil, just until it turns bright green.  I added a splash of hot water just to steam it a little.  I put it in a bowl and start cooking the red pepper in the same manner.  Cook until it just begins to soften.  I did not add hot water to the peppers, because they cook a lot quicker.


Now to get the steak ready.  I was going to get the sirloin strip steaks, the ones I cut up for steak tips, but they had very few packages, and they were really expensive, so I bought two packages of blade steaks.  They were a little tricky to cut up because of the tough tendon that runs down the middle of them, but these steaks are loaded with flavor and tenderness, so it was worth the effort!  I sliced them, and mixed them with some soy sauce, sesame oil, and probably about 2 tbs of corn starch.  I stir-fried half at a time in a really hot pan, along with a crushed garlic clove.  




When the steak was almost done, still a little pink in the middle, I took it out of the pan and put it in with the broccoli and peppers.  Repeat with the second half of the steak, then stir everything together.  Add the sauce you put together first and let simmer for only about 5 minutes.  You want the broccoli to stay a little crunchy and the steak to be just a little pink.  At this point I tasted it and found it needed some crushed red pepper (for some heat), a little more sesame oil and a little salt.  It's totally up to your taste buds what you add.



The last thing to do is make some rice.  I chose to make some sticky (sushi) rice..... 1 cup of rice to 1 1/4 cups water.   Rinse the rice well before adding it to the water, which had about 1 tbs of Better Than Bouillon Chicken Base and a couple of tbs of butter.   Bring to a boil, then turn down and cover.   Simmer on low for about 15 minutes.  Turn the heat off and let sit for about 5 minutes, or until all the water is absorbed.


All that is left is to grab a plate, spoon a little rice on it and bring on the beef and broccoli.  It is definitely a keeper, and will be in Shannon's lunch box tomorrow!!!  Have a great night.
