A delicious recipe for cranberry walnut chicken salad made easy!


There is just something about combining the tastes of craisins, walnuts, and chicken that is so delicious. I wonder why it took someone so long to come up with the combination!  I am just grateful they did.... but making any kind of chicken salad is definitely a chore.  Cook the chicken, cool the chicken, cut up the chicken, and hopefully when all is said and done, you haven't over-cooked it to the point where it is dry!

What I have done is eliminate those first three steps.  I use a can of chicken breast, either by Swanson or if you go to Costco, the Kirkland brand is great.

 

Drain the water and place in a mixing bowl.  Break up the chunks of chicken as you would tuna fish.  Then add craisins, chopped walnuts, some tarragon (for those who need measurements, at least 1 tablespoon), salt and pepper, and mayo.   It's up to how "mayonaisy" you like your chicken salad, to know how much to add!  I don't like mine too dry, so I add a generous amount.  The chicken will soak up some of it if you make the salad ahead of time.


So there you have it.  Really easy and really tasty!  And, you can make it in about 10 minutes!
