Mashed potatoes? Look again...



I love, love, love real mashed potatoes with all that butter, sour cream, cream, chees, salt and pepper..... so delicious but not so great for the diet!  Recently, I had some mashed cauliflower at a restaurant that was so yummy, that I decided to try to duplicate it at home.


This is really easy.  Take one head of cauliflower and cut up.  Cook in boiling salted water for only about 10 minutes.  When done, dump out the water and leave the cauliflower in the pan with the cover on for another 10 minutes.  This gives the cauliflower a chance to absorb any excess water.  Remove the cover and pat with paper towels to make as dry as possible.















Now for the good stuff!  Mash or use a stick blender to blend the cauliflower with about 1/2 a stick of butter and about 4 oz of light cream cheese, along with salt and pepper.  That is it!  So simple and easy and it melts in your mouth.

What a great substitution for mashed potatoes...
